My Go-To Breakfast Egg Recipe: Simple, Nutritious, and Delicious

We all need a go-to breakfast that’s quick, nutritious, and delicious—and this one has quickly become my favourite. A friend shared it with me, and it’s now a staple in my morning routine. Packed with protein, healthy fats, and leafy greens, it ticks all the boxes for a nourishing start to the day. Plus, it's super versatile, allowing you to switch up the spices and herbs to match your taste.
Ingredients
Spinach (frozen spinach has been a game-changer in my kitchen!)
Eggs (as many as you'd like)
Sea salt
Any spices you like—I usually go for extra chilli, but my friend loves garlic and turmeric
Instructions
Defrost the Spinach: If you’re using frozen spinach (which is super convenient and budget-friendly), just pop it in the microwave for about a minute to defrost.
Add Spices: Once the spinach is thawed, season it with sea salt and your favorite spices. I love adding a pinch of chilli flakes for a bit of heat, but feel free to get creative here—garlic, turmeric, and black pepper all work great too!
Whisk the Eggs: Crack in your desired number of eggs and whisk everything together until well combined.
Cook the Eggs: Heat some butter or your favorite cooking oil in a pan (I love using coconut oil or grass-fed butter). Pour in the spinach and egg mixture, and cook over medium heat, stirring occasionally until the eggs reach your preferred consistency. I like mine soft and a bit creamy, but you can cook them to your liking.
