Ingredients

  • 1 small sugar pumpkin (also called pie pumpkin)

  • Pinch of salt (optional)

Instructions

  1. Preheat & Prepare: Preheat your oven to 400°F (200°C). Wash and dry the pumpkin, then carefully cut it in half from top to bottom. Scoop out the seeds and stringy bits (save the seeds if you’d like to roast them later!).

  2. Roast: Place the pumpkin halves cut-side down on a baking sheet lined with parchment paper. Roast for 35-45 minutes, or until a fork easily pierces through the skin.

  3. Scoop & Blend: Allow the pumpkin to cool slightly, then scoop out the soft flesh into a blender or food processor. Blend until smooth and creamy. If the purée is too thick, you can add a little water (1 tablespoon at a time) to reach your desired consistency.

  4. Season (Optional): Add a pinch of salt if you'd like. This can enhance the flavor, especially if you’re using it in savory dishes.

  5. Store: Use immediately, or store in an airtight container in the refrigerator for up to 1 week. You can also freeze it in portions (ice cube trays work well!) for up to 3 months.

Tips

  • Choosing Pumpkins: Opt for sugar or pie pumpkins—they’re smaller, sweeter, and have a smoother texture than large carving pumpkins.

  • Serving Ideas: Use your pumpkin purée in soups, pies, smoothies, or as a nutritious addition to oatmeal or baked goods!

Enjoy your homemade, fresh pumpkin purée! 🎃
